Mooncake RecipeĀ for Sweetened Bean Paste Mooncake

Ingredients: 200g medium-gluten flour, 140g invert sugar syrup, 50g peanut oil, 4g alkaline water, 300g ready-made sweetened bean paste

  • Step 1: mix and pour inverted sugar syrup, alkaline water, and peanut oil into a bowl and stir until emulsified.
  • Step 2: Sift in the flour, stir and mix with a silicone spatula until no dry flour remains (do not knead the dough). Cover with plastic wrap and let rest at room temperature for 2 – 3 hours.
  • Step 3: Divide the sweetened bean paste into 25g portions and roll into balls.
  • Step 4: Divide the dough into 20g portions and roll into balls.
  • Step 5: Flatten the dough into a bowl shape with palm, place the sweetened bean paste ball in the center.
  • Step 6: Hold the bottom of dough with your left hand, press the paste with your right thumb, and use your index finger to push the dough closed
  • Step 7: Coat the wrapped balls with a thin layer of starch, press into the mold evenly, gently tap to release from the mold.
  • Step 8: Spray water on the mooncakes, bake at 180ā„ƒ for 8 minutes, brush the protruding pattern with egg liquid, re-bake at 170ā„ƒ for 12 minutes
  • Step 9: Store at room temperature for 48 hours, then you can have a taste directly now.

Can I eat mooncakes at other times of the year?

Of course, mooncakes are essentially baking pastries, so you can eat at any other times of the year you want. However, as a specific food for Mid-autumn Festival, mooncakes usually becomes more widely available in cake shops and food markets across the country about one month before the festival. This period is when you can easily find all flavors and types.

But, surely, you can buy and eat it at other times.

How long do mooncakes usually last?

The shelf life of mooncake is mainly based on the type of filling and the preparation method. Usually, the packaged mooncake can be stored for 2 – 3 months and the homemade mooncake can be stored for 7 – 15 days.

When stored at room temperature, the shelf life of five kernel and multinuts moon cake is 2 -3 months, that of lotus seed paste, sweetened bean paste, flaky crust mooncake is 1 – 2 months. While the snow skin, meat and ham mooncake can be kept for 1 – 2 weeks in refrigerated preservation condition.
