The soup base of Chongqing hotpot must be made of thick red butter. The nine-grid pot is its symbol, and each grid is filled with different vegetables and meat. The dipping sauce is very simple, consisting only of garlic paste and sesame oil.
Chengdu hotpot usually adopts a soup base made of butter or rapeseed oil, thus is less greasy. The dipping sauces can be called a “buffet”. Garlic paste, sesame oil, vinegar, crushed peanuts, sesame paste, chopped scallion…are placed on a platform and you can have everything you want.
For first-time visitors, I would recommend Chengdu hotpot, but it’s also fine to choose Chongqing hotpot if you are used to heavy flavor.
